Increased production of finished meat products in Kazakhstan establishments and import into domestic market of non-traditional sausages requires a comprehensive quality control based on modern methods of laboratory analysis. Currently, however, it is the task of creating tailored for domestic meat and meat industry own complex system of self-regulation using rapid methods for carrying out veterinary-sanitary examination. Materials and methods. For the study sausage demanded by the population were chosen: boiled sausage "Doctor", "Dairy" highest grade (GOST 23670-79), smoked sausage "Ukrainian" grade 1 , "Polish" Grade 2 (GOST 16351-86). Qualitative and quantitative determination of GMOs in food products was performed using test systems and equipment manufactured by JSC "SPC DNA technology". Qualitative detection of GMO was performed by using DNA test systems technology. At the stage of the qualitative detection of GMOs in food samples and food raw material by polymerase chain reaction was used reagent kit "TEST - CTAB " and test systems "flank - GEN", "SCAN- SOY" manufactured by JSC "SPC DNA technology".

The test system is based on the use of DNA amplification process by the PCR method. The process is repeated amplification cycles: denaturation temperature of DNA annealing of primers (primers) complementary to the sequences of the polynucleotide and the subsequent completion of the polymerase chain DNA. In the amplification mixture introduced DNA probes, each of which comprises a fluorescent label and a fluorescence quencher. In the case of formation of a specific DNA probe of the product is destroyed, which leads to an increase in fluorescence, which is recorded by the detector or the PCR thermo-cycle.

In test systems "flank - GEN", "SCAN- SOY" in the mix for added internal amplification control sample (VC), designed to evaluate the effectiveness of the flow polymerase chain reaction. Quantitative determination of GMO was performed using DNA test systems technology. In step quantifying GMOs in food samples and food raw material by polymerase chain reaction (PCR) detection of amplification products in "real time " used test system "Quantum F - SOY". Test system "Quantum F - SOY" designed to determine the percentage of the 35S promoter relative soybean genomic DNA (Glycogen) in samples of food products and raw materials containing soy. Calculation of the DNA content of the 35S promoter relative genomic DNA of soybean (corn) is done automatically at the end of the PCR reaction using the calibration line, built on the basis of testing calibration standards with each new production .

Modes of amplification are shown in Tables 1 and 2.

In the column "% GMO" for each sample analysis results are recorded as percentages of DNA content relative to the 35S promoter of soybean genomic DNA. The lowest two positions indicate the content of soybeans in the control sample; the following two positions characterize the content of transgenic soybeans in the sausage "Ukrainian ", the following 4 - content in the "Doctor" and "Dairy", respectively. The results of genetically modified soybeans in the experimental batches sausages were determined. Contents genetically modified soybeans, at a rate of 0.9 % in the sausage "Doctor" is overstated and is 1.0% , and in the "Dairy " - more than 5% . Thus regulatory and technical documentation does not allow the use of even natural herbal supplements, which means falsifying data products.
