BIOCHEMICAL
COMPOSITION OF PADDLEFISH MEAT

The object of research and relevance. The muscle tissue of paddlefish at the age of one and a half years has
been taken for the investigation.
Adult
paddlefish reach a live weight of 100 kg and above. But there are no data of
the biochemical composition of paddlefish meat in the literature. It has determined the relevance of research.
Research methods. Investigations
have been carried out in the test center of the Institute of Animal Science.
The results of research. Indices of paddlefish muscle tissue have been determined based on the
absolute moisture and the absolute dry weight [1, 2, 3, 4].
The
biochemical content of paddlefish meat is given in tables1and 2 [5, 6, 7, 8, 9,
10].

Conclusion
The research results
have shown that the meat of paddlefish is enough juicy, because it contains
more than 80% of water. Muscle tissue of paddlefish is rich in essential amino
acids such as valine, isoleucine, lysine,
methionine, threonine, tryptophan, phenylalanine and arginine with
histidine, which are essential in the children diet. Paddlefish meat contains important
fatty acids such as stearic, oleic, linoleic, linolenic, arachidonic.
Therefore, the meat of paddlefish is biologically valuable food,
and a small amount of a fat makes it dietary.
