National Ukrainian cuisine has the unique features and
color. Only having tried traditional dishes, it is possible to understand
customs and originality of this country. In Ukraine for a long time there live
representatives more than hundred nationalities, therefore dishes in this
country represent harmonious mixture of Turkish, Polish, German, Jewish and
Russian kitchens. Besides, all it is seasoned by local Ukrainian color. It is
possible to name Ukrainian cuisine very various and bright, therefore it could
receive popularity all over the world. At it there is a huge variety of dairy,
meat, flour, fish, vegetable dishes and drinks. One of the most known dishes of
this kitchen is the Ukrainian borsch, for its preparation is used not less than
twenty kinds of products, besides, at present is practically thirty ways of
preparation of this surprising soup. Also as the well-known Ukrainian dishes
are considered Russian curd dumplings,”galushki”, sweet cheesecakes, juicy
sausages, rich rolls and appetizing cutlets kievski. All it it is possible to try
at Ukrainian cuisine restaurants. It is enough such restaurants on the Kiev

Ukrainian cuisine, lard, sunflower seeds, tomatoes, eggplants, sugar, and also
eggs and a potato are. National Ukrainian soups prepare on the meat, fish or
vegetable broth, containing various vegetables, and also meat dumplings,
macaroni, or quenelles with semolina addition. In a soup preparation time in it
usually put a lot of greens and a celery root. Also often prepare dairy soups
with addition of various groats, and also paste balls and dumplings. One of the
most known national soups of Ukraine is the borsch. The present Ukrainian
borsch prepare on meat with a stone, with addition in it more than 10 names of
various vegetables, preliminary stewed with fat, tomato paste, spices and a
flour. At Ukrainian cuisine there are the diversified dishes from various meat
and fish products. Meat as pets and birds, and wild is used. Special value in
Ukraine occupies lard. Such love to this product speaks some historical events.
During mongolo-tatar invasion to Ukrainians the use in food of pigs which
Tatars didn't touch has in many respects helped to survive, considering as
dirty animals. As a garnish in Ukraine use the diversified grain crops and
vegetables. The special place is occupied with flour products which are used as
in the form of baked bread, and the boiled test in meat dumplings or pasta
balls. As sweets in Ukraine bake products of shortcake dough. Also the great
value has honey with which various dishes are made. For preparation Russian
curt dumplings, jellies, kissels and other desserts as a stuffing use the
diversified fruit and berries. The basic features of Ukrainian cuisine in
preparation of drinks are natural ways of their reception. So, beer and kvass,
and also other drinks received by natural fermentation are very popular.
Ukrainian cuisine is famous for a variety of products from vodka. At addition
in vodka of various grasses, spices, fruit and some vegetables, receive
curative and pleasant tinctures on taste. Also among the population of Ukraine
popularly manufacturing of moonshine on the basis of sugar with addition of
various products of a phytogenesis. An alcoholic drink from vodka with addition
of honey and spices, named dumplings , and before the use it heat up. The
winemaking is very extended to territories of Crimea.
